Ingredients:
1/2 cup cream cheese (4 oz)
1/4 cup butter (1/2 of 1 stick)
1/2 teaspoon garlic powder
3 lbs Yukon Gold or Russet potatoes
1 tablespoon + 3/4 teaspoon salt
1 cup whole milk
1/2 teaspoon dried parsley
1/8 teaspoon black pepper

Instructions:

  1. First, Peel potatoes and cut into 1/2" - 3/4" cubes. Place into a large pot and fill with cold water just to cover. Stir in 1 tablespoon salt.
  2. Bring to a boil over medium-high heat, then reduce heat to medium and simmer until potatoes are tender, about 10-13 minutes (they should easily be pierced with a sharp knife).
  3. Drain potatoes and add milk, cream cheese, butter, 3/4 teaspoon salt, garlic powder, parsley and pepper and mash just until smooth and combined. 
  4. Serve & enjoy!
